Recipe : Famous Sundanese Karedok
Remember the Gado - gad from betawi? and Ulak - ulak from Ternate? This vegetarian dish has same simialirity to our menu today, Karedok. Karedok is vegetarian dish from Sundanese. Different with gado - gado, the karedok vegetable is raw but vegetable on gado - gado is already boiled. You can find the recipe of Gado - Gado in here :
And the difference of Karedo between ulak - ulak, all of them use raw vegetables but ulak- ulak using tamarind and lime juice. On Karedok we use much spicy. You can find the Ulak - Ulak recipe here :
Now lets just make your own Karedok!
Main Ingredient :
- 50 gr of sproutbeans
- 50 gr long beans ( cut to thiny sized)
- 1/4 cabbage ( chopped thinly)
- 50 gr Basil
- 2 small green eggplant ( cut thinly)
- 2 Cucumber ( thinly chopped)
Ground Spices :
- 150 gr fried peanuts
- 50 gr coconut sugar
- 1 garlic cloves
- 2 bird eye chillies
- 4 cm kaempferia galanga
- 1/2 tsp shrimp paste
- 1 tsp salt
- 75 ml water
- 2 tbsp tamarind juice
How To Make :
- Grind all the ground spices to a smooth paste. Put it on bowl and add water.
- Add the vegetable. Mix it well.
- Your Karedok ready to serve!
