Recipe : Famous Green Balado Duck

   

    Green Balado Duck is favourite and popular dish at Indonesia, especially Central Java. The mix combination of the green chili sauce with the duck, create amazing sensation to taste. Now lets make your own green balado duck!


Main Ingredient :
  1. 750 gr duck ( cut into 4 pieces)
  2. 1/2 tbsp salt
  3. 2 tbsp vinegar
  4. 3 tbsp cooking oil
  5. 2 indonesian bay leaves
  6. Lemongrass ( Bruised)
Ground Spices :
  1. 250 gr green chillies
  2. 10 shallots
  3. 6 garlic cloves
  4. 2 cm galangal
  5. 2 cm ginger
  6. 4 candlenuts ( roasted)
  7. 2 tsp salt
Note : Grind all spices in a food processor or by using mortar and pestle until a smooth paste.

Garnish :
  1. Fried Shallots 
  2. Sweet Soy Sauce
How To Make :
  1. Coat the duck with salt and vinegar. Wait for 15 minutes. Wash and clean. Drain.
  2.  Heat a little cooking oil in  a pan, Sautee the smooth paste with indonesian bay leaves and lemongrass until fragnant.
  3. Add the duck, cooked until the duck turning to  golden brown colour.
  4. Add Water, wait until boiled. Cover the pan. Cntinue until the duck meat soft and cooked plus the spices already etches.
  5. Add fried shallots and sweet soy sauce if you want. Your Green Balado duck ready to serve!
For the another way of cook, you can cook the spice paste and fried the duck separately. then you just can pour the spices on the top of fried duck. But if you more like bold taste, you may try the recipe above!
