Complete Slow Cooker Chicken Dinner


Ingredients

Servings: 5

  • 1½ pounds red potatoes, cut in half
  • 1 medium white onion, cut into wedges
  • ½ cup butter, softened
  • 2 teaspoons of rosemary, chopped
  • 1 teaspoon thyme, chopped
  • Salt, to taste
  • Pepper to taste
  • 3 garlic cloves, minced
  • Whole chicken 3½ to 4 pounds
  • 1 lemon wedge
  • 1 sprig of thyme
  • 1 sprig of rosemary
  • ¾ pound of fresh green beans


Preparations

  • 1. Place the potatoes cut in half and half the onion in the bottom of the slow cooker.
  • 2. In a bowl, combine the butter, rosemary, thyme, salt, pepper and garlic until well blended.
  • 3. Stuff the chicken with the other half of the onion and the lemon wedge.
  • 4. Rub the herb butter mixture all over the outside of the chicken.
  • 5. Place the chicken over the potatoes and onions in the slow cooker and place a sprig of thyme and rosemary on top. Cover and cook for 4 hours on high heat.
  • 6. Remove the chicken from the slow cooker and place it on a baking sheet.
  • 7. Add the green beans to the slow cooker. Cover and cook 20 minutes.
  • 8. Remove the lemon and onion from the inside of the chicken. Grill for 2-3 minutes or until the skin is golden brown. Let the chicken stand for 10 minutes before cutting it.
