Complete Slow Cooker Chicken Dinner

- 1½ pounds red potatoes, cut in half
- 1 medium white onion, cut into wedges
- ½ cup butter, softened
- 2 teaspoons of rosemary, chopped
- 1 teaspoon thyme, chopped
- Salt, to taste
- Pepper to taste
- 3 garlic cloves, minced
- Whole chicken 3½ to 4 pounds
- 1 lemon wedge
- 1 sprig of thyme
- 1 sprig of rosemary
- ¾ pound of fresh green beans
Preparations
- 1. Place the potatoes cut in half and half the onion in the bottom of the slow cooker.
- 2. In a bowl, combine the butter, rosemary, thyme, salt, pepper and garlic until well blended.
- 3. Stuff the chicken with the other half of the onion and the lemon wedge.
- 4. Rub the herb butter mixture all over the outside of the chicken.
- 5. Place the chicken over the potatoes and onions in the slow cooker and place a sprig of thyme and rosemary on top. Cover and cook for 4 hours on high heat.
- 6. Remove the chicken from the slow cooker and place it on a baking sheet.
- 7. Add the green beans to the slow cooker. Cover and cook 20 minutes.
- 8. Remove the lemon and onion from the inside of the chicken. Grill for 2-3 minutes or until the skin is golden brown. Let the chicken stand for 10 minutes before cutting it.
