Lava Cake
Ingredients
- 1/2 cup unsalted butter, melted + more to butter the ramekins
- 2 cups of white chocolate chips
- 4 tablespoons. heavy cream
- 1-1 / 2 cups 7UP®
- 4 eggs
- 6 egg yolks
- Zest of 1 lemon
- Zest of 1 lime
- 2 cups cake flour
- 1 cup icing sugar
- 1/2 tsp. salt
- 1 package of cherry gelatin
- 1/2 cup boiling water
- 12 maraschino cherries

- Granulated sugar
- Lemon zest and lime
- Maraschino cherries
- Grenadine syrup
Directions
- Preheat the oven to 375 °.
Cherry Filling
- Whisk the boiling water with the gelatin package and add 1 cup of 7UP®.
- Pour into small round silicone molds and place two cherries per circle.
- Place in the refrigerator until firm.
- Put in the freezer while preparing the lava cake dough.
Lava Cake
- Prepare the dough by melting the butter and the white chocolate chips.
- Stir in the remaining 1/2 cup 7UP® and heavy cream until smooth.
- Whisk the eggs, egg yolks and two zest together in a bowl, then slowly pour in the chocolate mixture to temper the eggs.
- Sprinkle with cake flour, icing sugar and salt and mix.
- Pour half of the dough into the prepared ramekins, take out a circle of cherries and place them in the ramekins, then cover with the rest of the dough. Repeat.
- Bake the cakes for 17 to 19 minutes; the top should start to crackle a little. Remove from the oven, put a knife around the edge and turn on a plate.
- Garnish with powdered sugar, lemon / lime zest and maraschino cherries.
