Shirley Temple Lava Cake


Ingredients

  • 1/2 cup unsalted butter, melted + more to butter the ramekins
  • 2 cups of white chocolate chips
  • 4 tablespoons. heavy cream
  • 1-1 / 2 cups 7UP®
  • 4 eggs
  • 6 egg yolks
  • Zest of 1 lemon
  • Zest of 1 lime
  • 2 cups cake flour
  • 1 cup icing sugar
  • 1/2 tsp. salt
  • 1 package of cherry gelatin
  • 1/2 cup boiling water
  • 12 maraschino cherries


Garnish

  • Granulated sugar
  • Lemon zest and lime
  • Maraschino cherries
  • Grenadine syrup

Directions

  • Preheat the oven to 375 °.


Cherry Filling

  • Whisk the boiling water with the gelatin package and add 1 cup of 7UP®.
  • Pour into small round silicone molds and place two cherries per circle.
  • Place in the refrigerator until firm.
  • Put in the freezer while preparing the lava cake dough.


Lava Cake

  • Prepare the dough by melting the butter and the white chocolate chips.
  • Stir in the remaining 1/2 cup 7UP® and heavy cream until smooth.
  • Whisk the eggs, egg yolks and two zest together in a bowl, then slowly pour in the chocolate mixture to temper the eggs.
  • Sprinkle with cake flour, icing sugar and salt and mix.
  • Pour half of the dough into the prepared ramekins, take out a circle of cherries and place them in the ramekins, then cover with the rest of the dough. Repeat.
  • Bake the cakes for 17 to 19 minutes; the top should start to crackle a little. Remove from the oven, put a knife around the edge and turn on a plate.
  • Garnish with powdered sugar, lemon / lime zest and maraschino cherries.
