You’ll Need:
- 2 tbsp olive oil
- 1 big yellow onion peeled and finely diced
- 2 garlic cloves minced
- a hundred thirty g | 4 1/2oz oyster mushrooms sliced thinly
- one hundred thirty g | 4 1/2oz shiitake mushrooms sliced thinly
- a hundred g | three half-ounce button chestnut mushrooms halved
- two hundred g | 7oz quinoa I used white, black & purple quinoa
- 1.25 liters 5 cups hot vegetable stock
- a hundred g | 3 half oz clean spinach
- 60 g | 2oz grated difficult cheese inclusive of Grana Padano test its miles vegetarian
- 1 tbsp finely chopped fresh thyme
- 1 tbsp finely chopped fresh flat leaf parsley
- salt and pepper to season
- 4 big eggs + four tbsp water
How to Make:
- Preheat the oven to 180C (350F) and upload 4 tablespoons water at once inside the holes of a standard muffin tin.
- heat the oil in a non-stick casserole pan and sweat the onion over medium-low heat for five minutes.
- add a pinch of salt, the garlic, and mushrooms. Fry for four-5 mins, stirring, until the mushrooms are properly colored.
- Stir in the quinoa, inventory, and thyme and simmer for 20 minutes till the liquid is absorbed and quinoa is cooked thru.
- add the spinach, stir it via the risotto and then cowl the pan so that it wilts.
- even as the quinoa is cooking, break the eggs, one by one, in a small bowl then side into the prepared muffin tin holes. You need a few glasses of water to cover the pinnacle of the eggs.
