Recipe : Famous Balinese Sambal Raja ( Sambal Kutai )
Sambal Raja or sambal kutai is a kind of sweet chili shrimp paste added with calamansi juice for aromatic acidity. Because the chilli seed had been removed, the paste isnt overly spicy and its texture smooth. Sauteed with little oil, the end result is a glossy, appetizing chili paste. This sambal becomes even more specil when served with hard boiled egg or fried tempe and a variety of fried vegetables, such as long beans, eggplants and shallots.
Main Ingredient :
- 2 hard boiled eggs
- 5 long beans
- 1 eggplant
- 10 shallots
Spice Paste :
- 10 large red chillies
- 10 birds eye chillies
- 1 calamansi
- Shrimp paste, salt, sugar to taste
How To Make :
- Cut the long beans into 2 cm lengths. Cut the eggplant into dices ( 1 cm). Slice the shallots into four parts each. Fry all of them on high heat for a few minutes.
- Chop the hard boiled eggs.
- In a food processor or using mortar and pestle grind the chillies, Shrimp paste, salt and sudar to a paste. Squeeze calamansi juice onto the chilli paste.
- Heat a little cooking oil in a pan and sautee the chilli paste for a few minutes. Thinly slice the calamansi skin and add intoo the chilli paste.
- Serve the chilli paste in the middle of mortar. Place the chopped hard boiled eggs and fried shallots, eggplants and long beans around the chili paste. Serve immediately along with other dishes.
